10-Minute Caramel Pumpkin Sauté
This is an easy way to get that sautéed pumpkin flavor!
Ingredients
* 1/10 to ⅛ of a Japanese pumpkin (kabocha)
* ½ tablespoon butter
* 1 tablespoon sugar
* ½ tablespoon soy sauce
* Dry roasted almonds if desired
Directions
1. Dice the pumpkin into 2-centimeter (¾-inch) cubes, and heat them in the microwave for about four minutes to cook them through.
2. In a frying pan on medium heat, heat the butter and lightly stir-fry the pumpkin.
3. Add sugar and soy sauce, shaking the pan to coat the pumpkin evenly. If desired, add dry roasted almonds. Work quickly, as the sugar will melt and caramelize.
For a different taste, try using less soy sauce and adding more sugar with a dash of cinnamon!
